Ingredients

• 3cl Symphony 6
• 1cl lime cordial*
• 0.75cl honey water (1:1 honey:water ratio)
• 1 drop citric acid (5:1 water:acid ratio)
• 1 drop salt (5:1 water:acid ratio)
• 6cl soda water

Method

1. Combine Symphony 6, whiskey, cordial and acids over ice in a highball.
2. Top up with soda water. *To make lime cordial:
3. Combine 10 lime zests and 500g sugar ro do a oleo saccharum.
4. Add 150ml lime juice and 350ml water and 5 g citric acid. Dissolve and strain
